Monsters, eh? You're right- we don't want to give anything away, but we can talk about a few creatures we've already shown in screenshots or have previously mentioned in an interview:
Fanged Salamander
A common menace throughout the land. Dangerous in numbers.
Bloodsipper
A winged fiend from the underworld. Found above ground near dungeon and cave entrances.
Acid Grubb
You think they're dangerous when they're alive? Wait 'till you kill one of them...
Timberland Giant
600 pounds of berserker rage coming at you! Slow but very lethal.
Fungal Sludge
A crawling, spitting blob of digestive terror!
Giant Arachnid
It's a big spider. 'nough said.
So, there may be a couple creatures here that some of you haven't seen before. The remaining lineup you're going to have to discover on your own!

Oh, sorry Saxon, didn't mean to ignore you.
The giants do have a bit of back story within the context of the game world, but their history doesn't have much to do with the storyline so we really don't cover it in the game much. However, there are a couple side quests dealing with the giants and we are still filling in that area of the game, so I'll make sure we get some more info on the giants thrown into the narrative text.
But since you asked and we're feeling generous, we can say that the giants are not native to Thaermore (the region that the game takes place in). They were enslaved and brought there centuries earlier, but now live freely in the Timberland Plains, which is where they derive their name from.
The giants do have a bit of back story within the context of the game world, but their history doesn't have much to do with the storyline so we really don't cover it in the game much.
